Comforting pancakes, fluffy and delicious, for a perfect Mediterranean brunch, from one of my favorite chefs, Yotam Ottolenghi

I like his cuisine as it brings a distinctive mix of Middle Eastern flavors (Israeli, Turkish, Lebanese and Armenian) with a western twist. Sort of a European and middle-eastern fusion !

Ingredients

Green Pancakes of Yotam Ottolenghi 
½ lbs Spinach Leaves (227 grams)

½ Cup Flour (90 grams)

1 Tablespoon Baking Powder (12 grams)

1 Egg

¼ Cup Butter (57 grams)

½ teaspoon of Salt

1 teaspoon of Cumin

⅔ Cup Milk (157 grams)

6 Green Onions ('Scallions')

6 Chilies

1 Egg White

 Cooking

A small quantity of Olive Oil

Steps

Wilt the

Spinach Leaves

(½ lbs or 227 g) with a small quantity of water in a pan over high heat

Drain the leaves and set aside

In a mixing bowl, put:
  • The

    Flour

    (½ Cup or 90 g)
  • The

    Baking Powder

    (1 Tablespoon or 12 g)
  • The

    Egg

    (1)
  • The

    Butter

    (¼ Cup or 57 g) (melted)
  • The

    Salt

    (½ teaspoon)
  • The

    Cumin

    (1 teaspoon)
  • The

    Milk

    (⅔ Cup or 157 g)

Whisk together

Dice the

Green Onions ('Scallions')

(6) and the

Chilies

(6) and add into the mixing bowl along with the

Spinach Leaves

.

I didn’t use

Chilies

but rather chili powder

Gently mix

Egg White

(1) : you don’t want to over mix it, stop beating at the soft peak stage or you won’t be able to incorporate it well into the batter
Gently fold the

Egg White

into the batter, using a hand whisk and then a rubber spatula

Cooking

Spray a splash of

Olive Oil

and then ladle the batter, press down to form circles.

For the pancakes size : Yottolenghi mentions that pancakes should be small (3 inches diameter and 3/8 inch thick).
Green Pancakes of Yotam OttolenghiTo make round pancakes, I use the trick of pouring the batter into round cookie cutters (or english muffin molds).
Nobody needs to know !! As Julia Child used to say : « who’s in the kitchen to see ? »
Cook each side (Yottolenghi says approximately 2 minutes on each side)

I keep them warm by putting them on a plate on a doubleboiler, until my (hungry) guests are coming
